Qatari Jareesh

Ingredients:

200g of crushed or cracked wheat (Jareesh)
300g cooked chicken/lamb (shredded into pieces)
1l of chicken/lamb stock
3 garlic cloves, minced
1 onion, finely chopped
1 tbsp of za'atar
1 tbsp olive oil
Salt to, taste
Freshly-ground black pepper to taste

Method:

Rinse the Jareesh (cracked wheat) with cold water until the water runs clear. Set aside in a sieve to drain.

Take a pan and heat oil into it. Add the minced garlic and finely chopped onions. Fry until the onion is sot and translucent (about 4 minutes).

Add the cracked wheat and keep stirring until it is combined with the onion perfectly.

Toast for 1 minute then add the chicken stock. Increase to high and bring to a boil.

Once the mixture starts boiling, reduce the heat to low and cook it slowly for two to three hours. Stir occasionally during this time to avoid burning.

When the Jareesh starts thickening, add the shredded chicken or lamb and za’atar then season with pepper and salt. Cook the dish for another 5 to 10 minutes.

Switch off the heat and let the dish settle for a few minutes.

Serve the Jareesh with fresh yogurt, salad, and pickles.
