Za'atar is a traditional Qatari recipe for a classic spice blend that's used ubiquitously in Lebanese cookery. This forms the basis for soups, stews, toast spreads and even pizza toppings. Combine the thyme, sumac salt and sesame seeds in a clean coffee (or spice) grinder and render to a fine powder. This will keep well if stored in a sealed jar in a cool, dark, place.
Za'atar is a classic topping for many dishes. It's also made into a spread for bread: simply mix 2 tbsp za'atar with 2 tbsp extra virgin olive oil and spread on freshly-toasted bread. Season with freshly-ground black pepper and serve.
