Ingredients:
1.3kg lean beef, minced
500g fresh pumpkin, cut into 3cm cubes
450g cooked red kidney beans, drained (tinned is fine)
2 onions, diced
1.2kg tinned chopped tomatoes (with juice)
2 tbsp chilli powder
2 tbsp brown sugar
1 tsp salt (or to taste)
1 tsp dried oregano, crumbled
Method:
Brown the beef in a non-stick frying pan then transfer to a large cooking pot and stir-in the remaining ingredients. Bring to a boil, reduce to a simmer then cook for about 90 minutes.
Serve ladled into bowls with sour cream and boiled rice.
