Prig Nam Som (Chilli Garlic Sauce) a Classic Thai recipe for a sauce or condiment made from a blend of garlic, salt, vinegar and chillies that's pureed and chilled in the refrigerator to mature.
Crush and peel the garlic and remove the stem ends from the chillies. Combine in a food processor with the salt and pulse to chop into a coarse paste.
Scoop the chopped mixture into a jar and pour over the vinegar (you should have enough vinegar to cover the pepper and garlic mix). Set aside in the refrigerator to mature.
The sauce will thicken over time, and you will need to keep it topped up with vinegar to ensure that the mixture remains submerged.
