Pressure Cooker Calico Bean Stew

Ingredients:

90g bacon, chopped
455g lean minced beef
440g tin pork and beans
440g cooked kidney beans, drained
440g cooked butter beans
440g cooked lima beans, drained
120ml ketchup
220g brown sugar
160g chopped onion
45ml white wine vinegar
3g mustard powder
60g chopped celery
oil for frying

Method:

Heat a little oil in a deep frying pan or skillet and add the bacon and minced beef. Cook on medium heat, stirring frequently, until evenly brown. Drain and set aside to cool.

In your pressure cooker mix together the cooked meat, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, mustard powder and celery. Secure the lid, bring to pressure over high heat then reduce the heat to medium to stabilize the pressure and cook for 20 minutes. Take off the heat, place under cold, running, water to quickly reduce the pressure then open and serve.

This dish is very versatile and can be served as a main course in itself. It can also be served over rice or as a topping for baked potatoes. You can also serve it as a side dish.
