Prekese (Tetrapleura tetraptera) is a member of the fabaceae or bean family, known as aidan fruit in English. Its fruit is a four-lobed bean that is very aromatic and is used to spice dishes such as Banga soup, palm nut soup and various light soups. The plant is called prekese (or, more correctly, prɛkɛsɛ) in the Twi language of Ghana. It is also called uhio (uhiokrihio) in the Igbo language of Nigeria. It is also used to make this special Ghanaian drink.
Ingredients:
3 medium-sized Prekese
3 tbsp Fresh ginger, grated
Juice of 1 Lemon
Water
Honey
Method:
Wash the prekese thoroughly, bruise it with the back of a cleaver then break into small pices.
Place the prekese pieces in a bowl, cover with warm water, sit a lid or a plate on top and set aside for 30 minutes to infuse.
Add the lemon juice and grated ginger to the soaked prekese and mix well. Set aside for 30 minutes to infuse again.
After this time strain the liquid through a fine-meshed sieve lined with cloth.
Add honey to the strained liquid to taste. Pour the liquid into a jug or bottle and store in the refrigerator over night to chill.
It can be warmed in a pan and served as a hot night-time drink or it can be mixed with orange juice and served cold over ice with slices of lemon.
