Poutou

This is a fresh hot pepper sauce from Mayotte and Comoros, in essence, a spicy sauce and vegetable pickles (green mango, lemon, cabbage, papaya). Note that for this recipe you need the whole lemon, peel, pith, and pulp, just minus the seeds.

Ingredients:

1 onion
1 lemon
1 tomato
2 garlic cloves
4 hot chillies
1 piece of small cabbage
1 slice of papaya
1/2 small green (unripe) mango

Method:

Peel the onion, remove the seeds from the lemon (you need al the lemon except the seeds), core the tomato, peel the garlic, and de-stem the chillies.

Combine everything in the blender with a bit of salt, and puree.

Adjust the salt to taste. Serve fresh an a condiment.
