Poulet Yassa Burkinabé (Burkinabe Chicken Yassa)
Poulet Yassa Burkinabé (Burkinabe Chicken Yassa) is a traditional Burkinabe recipe (from Burkina Faso) for a classic stew of chicken in an onion, tomato, chilli and lemon juice base that is derived from Senegalese poulet yassa. Chicken yassa is a classic Senegalese dish, however, like so many of the West African classics, immigration and travel throughout West Africa has transported the dish to new countries. Today, it is an increasingly common and popular dish in Burkina Faso.
Ingredients:
1.5kg prepared chicken
1kg onions
juice from 250g lemons
150g fresh tomatoes
4 hot chillies
4 dessert spoons vegetable oil
salt and freshly-ground black pepper, to taste
garlic
Dijon mustard
Method:
Cut the chicken into serving-sized pieces and place in a bowl. Take half the onions and chop. Mix these with the chicken then pour in the lemon juice. Crush the chillies in a mortar and add these to the chicken along with salt and black pepper. Stir in the mustard then slice 2 of the tomatoes and add these. Cover and set aside to marinate for 30 minutes.
Slice the remaining onions into rings and crush the remaining tomatoes. When the chicken has marinated sufficiently, remove the chicken pieces from the marinade (reserve the marinade itself).
Heat the oil in a cooking pot. Add the onion and the chicken pieces and fry for about 5 minutes, or until the chicken is coloured. Pour in the reserved marinade and add the crushed tomatoes. Bring to a simmer and cook for about 40 minutes, or until the chicken pieces are tender and cooked through.
Serve hot, accompanied by rice (in Burkina Faso the rice is served separately, but in Senegal yassa is typically served on a bed of rice). You can prepare fish or meat yassa in the same way.
