Poulet Meshi (Tunisian Roast Chicken)

Also written as mosli or mossli, this is ono of the commonest dishes in Tunisia. For even more flavour top with a few sprigs of rosemary before roasting.

Ingredients:

1 tbsp olive oil
675g potatoes, peeled and cut into 5cm slices
1 large onion, finely chopped
2 tomatoes, finely chopped
1 green bell pepper, finely chopped
1 tsp salt
1/2 tsp freshly-ground black pepper
1.4kg chicken, washed and cut into 6 serving pieces
250ml water
4 parsley sprigs, finely chopped

Method:

Grease a roasting tin then layer the potatoes, onion, tomatoes and green bell pepper inside. Season with salt and black pepper then cover with foil or a lid and place in an oven pre-heated to 180°C. Bake for 10 minutes then remove and place the chicken on top of the vegetables.

Return to the oven and bake, uncovered, for 30 minutes. Remove from the oven at this time, and add the water and parsley. Cover and return to the oven for 15 minutes. Serve hot, accompanied by table harissa sauce.
