Potage Congolaise (Congolese Soup): Classic Congolese recipe for a soup of coconut milk and chicken stock that's finished with crème frache and spices and served garnished with diced coconut flesh.
Ingredients:
1l coconut milk
1l chicken stock
100g crème frache
1/2 tsp ground turmeric
1 tsp hot chilli paste
6 tbsp diced coconut, toasted
salt and freshly-ground black pepper, to taste
Method:
Combine the coconut milk and chicken stock in a pan. Stir to combine, bring to a simmer then add the cream and the spices.
Allow the soup to heat through then ladle into soup bowls and serve garnished with the diced and toasted coconut flesh.
