Ingredients:
4 pork loin chops
350g seedless red grapes in small bunches
6 parsnips, peeled and cut into chunks
8 large potatoes (eg santé), washed and cut into quarters
olive oil
salt and black pepper to taste
Method:
Toss the vegetables in a bowl with a little oil and season with salt and freshly-milled black pepper. Drizzle the chops with a little oil and season with salt and pepper. Place the chops and vegetables in a roasting dish and place in an oven pre-heated to 190°C and bake for 45 minutes, turning once. Add the grapes and cook for a further 15 minutes (or until the vegetables are done).
Spoon the potatoes and parsnips into a serving dish, squashing the potatoes with a fork until they begin to break. Arrange the pork on the same plate and garnish with the roasted grapes.
Keep warm and make a gravy with the pan juices, adding a little verjuice to complement the taste. (These days verjuice can be bought commercially, but one part cider vinegar, one part water with a dash of lemon and lime juice also makes an acceptable substitute.)
