This dish is a carnivore’s dream, featuring beef, sausage, and chips (fries) topped with a spicy sauce.

500g beef, sliced
225g sausage, sliced
2 potatoes, cut into chips (see the recipe for ultimate chips for how to prepare)
1 onion, sliced
1 tomato, sliced
1 aji amarillo chilli, chopped
120ml ketchup
120ml mayonnaise
oil for frying
Method:
For the sauce, combine the ketchup, mayonnaise and chopped aji amarillo chilli in a bowl. Set aside as you prepare the remaining ingredients.
In the meantime, prepare the chips (fries) according to the ultimate chips recipe.
Place a large frying pan over medium heat then add a splash of oil and use to fry the beef until done to your liking. Set aside on a plate to keep warm as you fry the sausage pieces.
Fry the beef, sausage, and fries separately. Mix ketchup, mayo, and aji amarillo for the sauce. Layer everything on a plate and drizzle with sauce.
To assemble the dish, arrange the chips (fries) on a plate. Top with the beef and the sausages then drizzle over the sauce and serve.
