Pipis de Galinha (Portuguese Chicken Giblets) is a traditional Portuguese recipe for a classic dish of chicken giblets fried with onion and garlic and finished in a wine sauce with chillies and spices. Ingredients:
1kg chicken giblets
20ml (4 tsp) olive oil
1/2 tsp ground cumin
1/4 tsp ground cloves
1 tsp paprika
1 bay leaf
salt and freshly-ground black pepper, to taste
crushed, dried, piri-piri, to taste
2 onions, chopped
2 garlic cloves, crushed
100ml white wine
Method:
Chop the giblets into large bite-sized pieces then heat the oil in a pan and use to fry the giblets until well browned. Stir-in the spices and season well then add the onion and garlic. Fry for 5 minutes, stirring frequently, then add the wine.
Bring the mixture to a simmer and cook until done (between 20 and 40 minutes depending on the parts of the chicken being cooked). If the mixture is drying out too quickly add a little water.
