The lamb Valentine steak is a cut that's gaining in popularity. It's a boneless double steak of lamb loin butterfly cut into very attractive and classy looking steaks. This makes an excellent cut of meat for that special Valentine's day dinner.
Ingredients:
2 Valentine lamb steaks
1 small sprig of fresh
rosemary
125ml red wine
butter
4 medium potatoes, peeled and halved
1 medium turnip, peeled and quartered
2 large carrots, peeled and cut into thirds
salt and freshly-ground black pepper, to taste
olive oil, for greasing
Method:
Prepare the root vegetables then bring a pan of lightly-salted water to a boil then add your vegetables inside and cook for about 30 minutes, or until tender.
Meanwhile, place a frying or griddle pan over high heat. Rub the Valentine steaks all over with olive oil and season. When the steaks are hot add to the pan then add a sprig of rosemary to top of each steak, pushing down to ensure it sticks. Cook for about 4 minutes on one side then turn the lamb over and cook for about 4 minutes on the other side (for medium). Remove the meat from the pan then set aside, covered, for about 3 minutes to rest.
Now prepare the sauce. Take the pan off the heat and add the red wine. Return to the heat and scrape the base of the pan to de-glaze. After about 2 minutes add a knob of butter then season with salt and black pepper. Stir the mixture to combine the ingredients and allow the volume to reduce by half. At this point add another knob of butter and adjust the seasonings again.
Now drain your vegetables and mash with a couple of generous knobs of butter. Season to taste then serve the Valentine steak with the root vegetable mash and a generous drizzle of the red wine sauce.
