Peixe Grelhado (Grilled Fish) is a traditional Guinea-Bissau recipe for a classic dish of fish stuffed with a herb, chilli, garlic and onion paste before being marinated and then grilled on a barbecue. 2 firm white fish, cleaned and scaled
2 hot chillies, chopped
4 garlic cloves, chopped
1/2 bunch flat-leaf parsley, chopped
1/2 bunch coriander (cilantro), chopped
1 tbsp tamarind pulp
juice of 1 lime
salt and freshly-ground black pepper
avocado puree, to serve
Method:
Cut several deep slashes in the sides of the fish. Combine the chillies, garlic, parsley, coriander and tamarind pulp with the lime juice in a mortar. Pound to a paste then spread this paste inside and outside the fish, taking care to rub into the slashes in the skin. Set aside to marinate in your refrigerator for 2 hours.
In the meantime, pre-heat your barbecue or grill (broiler). Once the fish has marinated place over you hot barbecue and grill for about 15 minutes per side, until cooked through.
