Peanut Macaroons

These are a classic Sudanese and South Sudanese biscuit made with peanuts and icing sugar then are typically served as a light nibble to accompany tea or coffee.

Ingredients:

300g (2/3 lb) skinless unsalted peanuts
1 vanilla pod
3 egg whites
pinch of salt
180g (1 cup) icing (confectioners') sugar

Method:

Pre-heat the oven to 180°C (160° fan/355°F).

Pour the peanuts on a baking tray and arrange in a single layer. Transfer to the centre of your pre-heated oven and bake for about 15 minutes, until golden. Turn onto a plate and set aside to cool.

Combine the egg whites in a bowl with a pinch of salt then beat with a whisk until they stand in soft peaks. At this point, add the icing sugar whilst beating constantly until completely combined. Transfer the resultant mixture to a bowl.

Dry your food processor, add the cooled peanuts and pulse for 3 ten second bursts. Scrape out the seeds from the vanilla pod and add these as well. Pulse to mix with the chopped nuts. You will end up with a grainy mixture. Mix the peanut powder with the egg white and icing sugar mixture.

Spoon the resultant mixture into a piping bag then, using a wide nozzle, pipe the mixture into biscuit swirls on a baking tray lined with baking paper, making sure you space them out evenly. Transfer to your pre-heated oven and bake for 12 minutes, until golden.

Allow to cool and set completely on the baking tray before serving or storing.
