This is a classic restaurant starter of cubes of paneer cheese in a red spicy coating that are deep fried to cook. As with most Indian restaurant recipes on this site this can also be made with tandoori cauliflower (gobi), cooked chicken, cooked lamb or prawns.

Ingredients:

400g (14 oz) Paneer (Cottage Cheese)
5 tbsp Maida (plain [all purpose] flour)
6 tbsp Cornflour (cornstarch)
2 tbsp Rice Flour
2 tbsp ginger-garlic paste
1 tsp Chaat Masala
1 tsp garam masala
2 tsp Red Chilli Powder
2 tsp Coriander Powder
1 drop of Red Food Colour (or 2 tsp Kashmiri chilli powder) (optional)
8 tbsp Water
1 tbsp oil
oil for deep frying
2 medium Onions, finely sliced
16 Curry Leaves
3 tbsp Thick Curd
1 1/2 tsp Salt (or to taste)

Method:

Cut the paneer into 3cm (1 in) cubes. In a medium bowl, combine the maida, cornflour, rice flour, ginger-garlic paste, chaat masala, garam masala, 1 tsp red chilli powder, coriander, red food colouring (or Kashmiri chilli powder) and salt to taste.

Mix in about 8-12 tbsp water to make a medium-thick paste. Add the paneer cubes and toss to coat well in the batter.

Heat oil in a large pan or wok over medium heat for deep frying. Add the coated paneer cubes in small batches (about 5-6 cubes at a time) and deep fry until golden brown and crispy on all sides. Drain with a spider or slotted spoon and transfer to a plate covered with kitchen paper as you cook the next batch.

Heat 2 tsp oil in another pan over medium heat. Add the sliced onion and curry leaves, frying for about 3 minutes, until the onion is soft and translucent. Stir in the curd, remaining chilli powder and season with a little salt. Mix well to combine and cook for 1 minute.

Add the deep fried paneer and cook for 2-3 minutes. Turn into a warmed serving bowl and bring to the table.
