Coconut Crab Curry

This is a twist on thraditional Palauan Coconut Crab Delight that turns that dish into a curry with the addition of Polynesian curry powder.

Ingredients:

500g coconut crab claws, legs and meat from the shell
2 tbsp Polynesian curry powder
400ml coconut milk
1 small onion, chopped
2 garlic cloves, minced
3cm piece of ginger, sliced
1 tbsp soy sauce
1 tbsp lime juice
Salt and freshly-ground black pepper to taste

Method:

Fry the onion, garlic, and ginger until fragrant. Scatter over the curry powder and stir to combine, cooking for about 90 seconds until aromatic. Add the crab meat and crab pieces and cook for 5 minutes.

Pour in the coconut milk, soy sauce, and lime juice. Bring to a simmer and cook for 10-15 minutes.

Season to taste with salt and pepper. Serve with steamed rice.
