This is a home-made copycat version of commercial curry powders sold across Polynesia. It is the curry spice blend to use if preparing dishes such as Samoan Kale Moa

Ingredients:

1 tbsp ground Turmeric
2 tsp ground Coriander
2 tsp ground Cumin
2 tsp ground Fenugreek
2 tsp ground Black Pepper
1 tsp ground Ginger
1 tsp ground Mustard seeds
2 tsp ground Fennel Seeds
1 tbsp ground Allspice
2 tbsp chilli powder

Method:

To prepare, stir all the ingredients together in a small bowl.

Spoon into a jar, seal and store in a cool, dark, cupboard. It should stay good for up to a month.
