This is an unsweetened coconut milk sauce intended for topping savoury dishes. To make a sweet or dessert version of this sauce simply mix in 4 tbsp sugar along with the salt.
Ingredients:
1 tbsp starch (arrowroot or cornflour)
pinch of salt
300ml coconut milk
Method:
Pour the coconut milk into a saucepan. Place over medium-high heat and stir the coconut milk with a spoon as it heats up.
Depending on the canned coconut brand, the coconut milk may be separated into 2 parts: a creamy fatty top and a watery bottom. Combine both into the sauce pan and heat it up and mix it together.
Add the salt and continue stirring.
Blend your choice of starch with about 2 tbsp water to form a smooth slurry. Add this to the coconut milk.
Keep stirring with a spoon. As the milk heats up it will thicken. Stir out any clumps if they form.
Take off the heat when it's reached your desired consistency.
