Nyama ya Figo (Beef and Kidneys)

This is a classic dish from Dar Es Salaam, where kidneys are considered a particular delicacy.

Ingredients:

1 whole beef kidney
675g beef steak, cut into 3cm cubes
60g butter
1 tsp curry powder
100g onions, sliced
2 tomatoes, sliced
500ml water
1 tsp salt
1/2 tsp cayenne pepper

Method:

Bring a pan of salted water to a boil, add the whole kidney and simmer, covered, for 30 minutes. After this time drain the kidney and discard the cooking water. Return the kidney to the pan, cover with fresh water, bring back to a simmer and cook for 30 minutes, or until tender all the way through. Drain the kidney, core it and dice finely.

Melt the butter in a pan, add the beef steak (do not allow to brown) and fry gently for 2 minutes then add the kidney pieces and fry gently for 2 minutes more. Scatter over the curry powder and stir to combine.

Now add the onions, tomatoes, salt, cayenne pepper and water. Bring to a boil, reduce to a simmer, cover and cook for about 30 minutes or until the beef is tender and the liquid has reduced to a sauce.

Serve hot, accompanied by ugai and/or rice and piri-piri sauce.
