Nigerian-style Spaghetti

Nigerian-style Spaghetti is a traditional Nigerian recipe for a classic accompaniment of spaghetti in a hot chilli and tomato sauce with curry powder, onions and thyme that can also be served as a vegetarian dish. This is a common accompaniment in Nigeria, particularly in fast food restaurants. The dish is quite hot, but you can dial-down the chillies and curry powder to your own tastes.

Ingredients:

200g spaghetti, broken in half

For the Sauce:
1 tbsp groundnut oil
3 tomatoes, chopped
2 Scotch bonnet chillies, chopped
1 onion, chopped
5 spring onions, chopped
1 tbsp curry powder
70g tomato purée
1 Maggi cube or stock cube
1 tsp thyme leaves, finely chopped
1/2 tsp sea salt

Method:

Begin with the sauce. Add the oil to a pan then stir in the tomatoes, pepper and onions. Fry for about 5 minutes, or until softened then add the curry powder, tomato purée, stock cube, thyme leaves and stock. Bring the mixture to a simmer then add a little water until you have the desired consistency.

Return to a simmer, cover and cook for about 20 minutes, or until the sauce is thick.

In the meantime, bring a pan of lightly-salted water to a boil, add the spaghetti and cook for about 10 minutes (or according to the packet directions) or until the pasta is al dente.


Drain the pasta and add to the pan with the chilli and tomato sauce. Stir to coat all the pasta in the sauce then turn into a warmed bowl and serve as an accompaniment.
