Nigerian Spicy Scrambled Eggs

This is one of my wife's go-to recipes when she's not sure what to cook. Beyond the basic recipe below she will also add indomie (instant noodles) and tinned sardines for a more substantial meal.

Ingredients:

8 eggs
4 tomatoes, sliced and chopped
1 chilli pepper, sliced
1 onion, sliced
1 garlic clove, crushed
3 green bell peppers, seeded and chopped
1 tsp fresh thyme
3 tsp chopped coriander leaves
3 tsp groundnut oil
salt and black pepper to taste

Method:

Heat the oil in a large frying pan, add the onion and cook until it begins to colour. Add the peppers and chilli and cook for 5 minutes then add the tomatoes, garlic and seasonings. Stir to blend then cook for a further 5 minutes.

Meanwhile, whisk the eggs lightly and season with salt and black pepper. Pour onto the tomato mix. Reduce the heat and cook, stirring constantly, until creamy and well combined (about 8 minutes). Spoon onto warmed plates, sprinkle with chopped coriander and serve hot.
