Nigerian Fried Turkey

This is a classic version of fried turkey pieces, as served in many fast food restaurants in Lagos. I have copied the original recipe as closely as possible, the only difference being that the original uses ridiculous amounts of MSG which I have substituted with Worcestershire sauce.

Ingredients:

10 turkey pieces (typically wing joints)
2.5 tbsp Nigerian seasoning mix
2.5 tbsp chilli powder
2.5 tbsp brown sugar
1 tbsp curry powder
1 tbsp Worcestershire sauce
plain flour, to coat
salt, black pepper and chilli powder


Method:

Combine all the ingredients in a plastic bag. Seal, mix thoroughly to coat the turkey pieces then set aside to marinate over night.

When ready to cook, heat your deep fryer to 180°C. Squeeze the bag to ensure an even coating for the turkey then remove the chicken pieces and dust with flour seasoned with salt, black pepper and chilli powder.

Add the turkey pieces to the hot oil and fry for about 25 minutes, or until cooked through and golden brown.

Serve hot with pasta or yam porridge.
