Ingredients:
2 tbsp butter
1 small onion, chopped
1/2 tsp curry powder
2 tbsp flour
500g smoked fish
180ml milk
black pepper to taste
2 sheets flaky pastry
1 egg yolk
Method:
Melt the butter in a saucepan and cook the onion in this until it becomes translucent. Add the curry powder and cook for 30 seconds. Stir-in the flour and cook for a further minute then gradually add the milk, stirring constantly until the mixture begins to boil and thickens. Remove from the heat.
Flake the fish and add to the flour mixture. Season with pepper to taste. Stir to combine then set aside to cool.
Place one sheet of the flaky pastry in a pie dish. Spoon the fish mixture into the dish and dampen the edges with a little water. Place the second sheet of pastry on top and crimp the edges together. Lightly beat the egg yolk and brush the surface of the pie with the egg.
Place the pie in an oven pre-heated to 220°C and bake for 20 minutes, or until the crust is golden.
