Nam Prig Pow (Roasted Chilli Paste)
Nam Prig Pow (Roasted Chilli Paste; น้ำพริกเผา) is a traditional Thai recipe for a classic sauce or condiment of a spice paste made from a blend of chillies, garlic, shallots, shrimp paste and tamarind paste. Nam Prig Pow (Roasted Chilli Paste) a Classic Thai recipe for a sauce or condiment of a spice paste made from a blend of chillies, garlic, shallots, shrimp paste and tamarind paste.
Ingredients:
6 whole, dried, cayenne chillies
75g garlic cloves, unpeeled
1 tsp salt
75g shallots, unpeeled
1 tsp shrimp paste
2 tsp tamarind paste
Method:
Grill or roast the garlic and shallots until lightly charred on the surface (about 5 minutes). Lightly toast the dried chillies in a dry pan until darkened on the surface.
Toast the shrimp paste on a banana or galangal leaf (cook for about 90 seconds, or until fragrant).
Peel the garlic and shallots then set aside. Add the chillies to a heavy mortar and pound to a fine powder. Add the garlic and shallots and pound until smooth then work in the remaining ingredients until you have a paste.
Store in a jar in the refrigerator. This paste will only keep for a couple of days. If you need to keep for longer, fry the paste with groundnut oil then turn into a jar, top with oil to keep the air out and store in the refrigerator.
