This is a recipe that is prepared in Comoros and on the island of Mayotte.

Ingredients:

20 green bananas, peeled and cut into small pieces
1 to 2 cassava roots, peeled and cut into small pieces
1kg of meat (beef or zebu), cut into small pieces
3 onions, peeled and sliced
2 lemons
1 tin of concentrated tomatoes
oil for frying
1/2 tsp cumin seeds
1/2 tsp black peppercorns
salt and freshly-ground black pepper, to taste

Method:

Place a pan over medium heat add a little oil and use to cook the onions for about 8 minutes until golden brown.

Add the meat and cook gently until coloured then add the cumin and pepper along with a little water. Cover and cook for 10 minutes.

Now add the bananas and cassava, topping-up the water as needed (it should just cover the ingredients). Mix everything together to combine, bring to a simmer, cover and cook for 30 minutes.

Adjust the seasonings to taste then serve accompanied by rice.
