This is a simple and interesting dish from Eastern Sudan, a sweet and spicy dessert or breakfast made from a blend of mashed bananas and chillies.
Ingredients:
4 large very ripe bananas
2 teaspoons lemon juice
5 whole fresh hot chilli pepper
Method:
Cut your pepper into tiny slivers so it dries out faster. Arrange the strips in a single layer on a baking tray, and then toast in an oven pre-heated to 50C (125F) for about 4 hours. Peel the bananas and slice into a bowl.
Use a fork or potato masher to mash the bananas thoroughly. For each cup of mashed banana, add one teaspoon of lemon juice to prevent browning.
Spoon the mashed bananas into a large bowl and top with dried hot chilli strips.
For a prettier presentation you can cut some banana peppers in half lengthways, arrange on a baking tray then bake for 10 minutes in an oven pre-heated to 165C (325F). Cool the peppers slightly, then stuff with mashed bananas and serve.
