Ingredients:

400g flour
180g sugar
1 tsp baking powder
2 tsp cinnamon
¼ tsp salt
380g grated carrot
80g sultanas
80g chopped nuts
60g grated coconut
160g grated apple
2 tsp vanilla extract
3 eggs, beaten
180ml oil

Method:

Mix together the flour, sugar, baking powder, cinnamon and salt then stir-in the carrot, sultanas, nuts, apple and vanilla. Mix the eggs and oil together and fold into the dry ingredients. Spoon into a greased muffin tin, making sure you fill the wells no more than 3/4 full.

Then place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for 20 minutes, or until the muffins are nicely coloured and springy to the touch.
