This is a classic Ghanaian stew made with baobab leaf powder. This is an Hausa recipe from the north of Ghana that is typically made with dried fish or fish powder. As this is an Hausa dish it is also common in Nigeria.

Ingredients:

75g (1/2 cup) dry baobab leaves powder (kuuka)
50g (2/5 cup) dawadawa (iru/fermented locust bean powder)
50g (2/5 cup) fish powder (ground smoked and dried fish)
2 hot chillies (Scotch bonnet or Habanero), minced
120g (3/4 cup) fresh onion, chopped
160g (3/4 cup) fresh tomato, chopped
2 tsp stock cube, crumbled
4 tbsp tomato puree
100ml (2/5 cup) red palm oil
500ml (2 cups) water
Salt, to taste

Method:

Grind together the tomato, half the onion and chillies in a blender or food processor to yield a paste.

Heat the oil in a large pot, add the chopped onion and fry until golden (about 6 minutes). Stir in ground tomato mixture along with the spices, stock cube, tomato puree and water. Mix well and bring to a boil then add the fish powder and salt.

Bring to a boil and cook for 10 minutes, until the ingredients are no longer raw. Scatter over the baobab leaf powder, stirring briskly to prevent lumps from forming. This should thicken the soup quite appreciably.

Cover and allow to cook until thick. Serve with rice.
