Some cocktails are so classic they simply stand the test of time and that's what the various cocktails in the Traditional Cocktails collection represent. The Midnight Hour cocktail is one of these. This is typically served as an aperitif before a meal.

Ingredients:

150ml gin
75ml raspberry liqueur
75ml passion fruit juice
75ml mistletoe tea
50ml sugar syrup (gomme syrup)
75ml mineral water
pink champagne to top up

Garnishes:

Sprig of Rosemary

Serving Glass

Chilled Champagne Flute

Method:

Combine the gin, raspberry liqueur, passion fruit juice, mistletoe tea, sugar syrup and mineral water in a large jug. Cover with clingfilm (plastic wrap) and chill in the refrigerator for at least 90 minutes, or until needed.

To serve, pour into champagne flutes and top with pink champagne. Garnish with a sprig of rosemary and serve immediately.
