Midia Atmou me Aspro Krasi (Mussels Steamed in White Wine) is a traditional Greek recipe for a classic starter of mussels steamed with onions, white wine and parsley. Ingredients:
1kg mussels
250ml white wine
2 onions, finely chopped
salt and freshly-ground black pepper, to taste
2 tbsp flat-leaf parsley, finely chopped
Method:
Pick over the mussels then scrub clean, remove any beards and discard any mussels that are open or have cracked shells.
Combine the mussels in a pot along with the onions, the wine and half the parsley. Cover the pot with a tight-fitting lid and boil over high heat for about 7 minutes, shaking the pan occasionally.
Remove the lid, season with salt and black pepper then discard any unopened mussels, divide the contents between four shallow soup bowls, garnish with the remaining parsley and serve.
