Microwave Christmas Pudding

Microwave Christmas Pudding: A British recipe for a Christmas plum pudding that requires less than 24 hours to prepare and which makes a wonderful standby if you have forgotten your pudding until the last minute, shown garnished with a holly sprig.
Ingredients:
75g fresh breadcrumbs
75g plain flour
pinch of ground mace
pinch of freshly-grated nutmeg
pinch of ground cinnamon
75g shredded beef suet
50g soft brown sugar
50g candied peel
75g currants
50g sultanas
150g raisins
40g blanched almonds, chopped
1 small cooking apple, peeled, cored and grated
finely-grated zest of 1/2 lemon
juice of 1/2 lemon
1 tbsp brandy
1 large egg, beaten
3 tbsp stout (eg Guinness)
1 tbsp milk
1 1/2 tbsp black treacle (molasses)
Method:
In a large bowl, mix together the breadcrumbs with the flour, mace, nutmeg, cinnamon, suet and brown sugar. Now stir in the candied peel, along with the currants, sultanas, raisins, almonds and chopped apple. Stir well to combine.
In a separate bowl, blend together the lemon zest and lemon juice with the brandy, egg, stout, milk and treacle (molasses).
Add the liquid ingredients to the dry ingredients, mixing well until you have a batter with a soft, dropping, consistency (add a little milk if the mixture is too stiff). Cover with clingfilm (plastic wrap) and leave aside to mature over night.
The following day, turn the pudding mixture into a greased 1.2l microwave-safe pudding bowl. Cover loosely with clingfilm (plastic wrap), transfer to your microwave (1200W) and cook on FULL power for 6 minutes.
Allow to rest for 5 minutes, then turn out onto a serving plate. Slice into wedges and serve with butter sauce, custard, cream or brandy butter.
You can cook the pudding a few days in advance, if you prefer. Store in the refrigerator and then warm by cooking on FULL power for 2 minutes before serving.
