This is a classic Mexican street food version of tacos with a carne asada filling served topped with onion, coriander and lime juice.

Ingredients:

2 tbsp soy sauce
2 tbsp freshly squeezed lime juice
2 tbsp vegetable oil, divided
3 garlic cloves, minced
2 tsp chilli powder
1 tsp ground cumin
1 tsp dried oregano, crumbled
675g skirt steak, cut into 12mm pieces
12 mini flour tortillas, warmed
50g diced red onion
10g fresh coriander leaves, chopped
1 lime, cut into wedges

Method:

In a medium bowl, combine the soy sauce, lime juice, 1 tbsp oil, garlic, chilli powder, cumin and oregano.

In a large Ziploc bag or large bowl, combine soy sauce mixture and steak; marinate for at least 1 hour up to 4 hours, turning the bag occasionally.

Heat the remaining 1 tbsp oil in a large cast iron pan over medium high heat. Add the steak and marinade, and cook, stirring often, until steak has browned and marinade has reduced, (about 5-6 minutes), or until the meat reaches your desired level of doneness.

Serve the steak mixture wrapped in warmed tortillas, topped with onion, coriander and lime.
