Mediterranean Mint Salad is a traditional Mediterranean recipe for a light salad of celery, tomatoes, spring onions and mint flavoured with a herb dressing. 2 celery sticks
1/2 red onion, chopped
8 cherry tomatoes, quartered
4 tablespoons butter beans
4 spring onions, roughly chopped
1/2 tablespoon red wine vinegar
2 tablespoons chopped fresh mint
juice of 1/2 lime
2 tablespoons olive oil
salt and pepper to taste
chopped fresh parsley
chopped fresh dill
fresh chervil to garnish
Fresh rocket (arugula) leaves, to garnish
Method:
Cook the butter beans beforehand, drain and allow to cool. Place in a mixing bowl, add the chopped vegetables and toss together before adding the oil, vinegar, lime juice and herbs. Toss to mix, garnish with the chervil and rocket leaves then serve immediately.
This is an excellent salad to accompany lamb dishes or lamb chops and also works well with strongly-flavoured fish.
