Meatballs on Sticks: Classic British recipe for a barbecue dish of beef and sausage meat meatballs that are cooked on a barbecue and served on sticks with a dipping sauce.

Ingredients:

4 pork and herb sausages
115g minced (ground) beef
85g fresh white breadcrumbs
1 onion, finely chopped
2 tbsp mixed fresh herbs, chopped (eg parsley, thyme, sage, chives)
1 egg
salt and freshly-ground black pepper, to taste
sunflower oil, for brushing
dipping sauces, to accompany (eg Thai sweet chilli, mushroom catsup etc)

Method:

Take the sausage meat out of the skins, turn into a bowl and break up with a fork.

Mix in the beef mince, breadcrumbs, onion, herbs and egg. Season to taste with salt and black pepper then stir well with a wooden spoon.

Form the resultant mixture into small balls (about golfball size) by moulding between the palms of your hands. Stick a cocktail stick into each one and brush with oil.

Place on a barbecue over medium-hot coals, turning frequently and brushing with more oil as they're turned and cook for 10 minutes, or until done through.

Transfer to a large serving plate and serve with a selection of dipping sauces.
