Palusami (Corned Beef, Taro Greens and Coconut Milk)

Palusami (Corned Beef, Taro Greens and Coconut Milk) is a traditional Marshall Islands recipe for a stew of corned beef onion and taro greens cooked in coconut milk flavoured with soy sauce. Ingredients:

340g tin Corned beef
1/2 bunch Taro leaves, chopped (substitute spinach if not available)
1 small Yellow onion, finely chopped
2 garlic cloves, minced
2 tbsp Soy Sauce
200ml Coconut Milk divided
oil for frying

Method:

Pre-heat your oven to 170°C.

Place a large saucepan over medium heat. Once hot, add a little oil (coconut oil is good) and fry the onions, stirring constantly for about 4 minutes, or until translucent.

Add the minced garlic and stir fry for 1 minute more.

Increase the heat to medium high and add the corned beef and soy sauce. Use a fork to shred the corned beef. Cook stirring occasionally until the corned beef is lightly browned but take care it does not burn.

Add in half the coconut milk and bring to a simmer.

Grease a casserole dish and line the base with half chopped taro leaves. Spoon over the corned beef mixture and then top with the remainder of the taro. Pour over the remaining coconut milk, then season lightly with salt and freshly-ground black pepper.

Cover the casserole dish tightly with foil, transfer to the centre of your pre-heated oven and bake for 45 minutes.

Serve accompanied by rice or poi.
