Makher Taukari (Fish Curry)

Ingredients:

450g firm-fleshed fish, gutted and scaled
1/2 tsp hot red chilli powder
1 tsp ground turmeric
1 tsp garlic
60ml oil
45g onions, finely diced
3 green chillies, chopped
3 tomatoes, chopped (optional)
1 tsp salt
chopped coriander leaves, to garnish

Method:

Add the oil to a wok and use to stir-fry the onion until translucent. Add the garlic and chillies and fry until the garlic begins to brown then stir-in all the remaining spices and fry for about 5 minutes longer.

Gently add the fish and fry on each side for about 3 minutes, or until the skin begins to crisp. Add just enough water to barely cover the fish then add the chopped tomatoes (if using). Cover and cook over medium heat until the fish is tender and flakes with a fork. Scatter the coriander leaves over the top, cover and cook for 5 minutes more. Serve immediately, accompanied with rice.
