Mafé Poulet (Chicken Mafé)

Ingredients:

1 chicken, jointed and cubed
3 onions, peeled and finely chopped
3 tomatoes, diced
2 sweet potatoes, peeled and cut into large chunks
2 dessert spoons peanut butter
2 Maggi chicken cubes (or chicken stock cubes)
salt and ground black pepper, to taste
2 hot chillies
a little oil

Method:

Remove the stems from the chillies and pound to a past in a mortar with a little of the onion.

Heat a little oil in a flame-proof casserole. Add the onion and fry until golden brown (about 8 minutes) then stir in the peanut butter and cook, stirring constantly, for about 6 minutes.

At this point add the diced tomatoes and stir to combine. Now add the chicken and crumble over the stock cubes. Season to taste with salt and black pepper then stir in the pounded chilli and onion mix.

Add the sweet potato pieces, cover the casserole and bring to a simmer. Cook gently for about 20 minutes, or until all the ingredients are tender and cooked through. During this time, if the sauce becomes too thick or begins to burn ad a little water to thin it down.

Serve hot, accompanied by boiled rice.
