Logosta Assada (Roasted Lobster)

Logosta Assada (Barbecued Chicken) is a traditional Guinean recipe (from Guinea-Bissau) for a classic dish of halved lobster dotted with butter and chilli paste that's cooked on a barbecue. Ingredients:

1 lobster
butter, to dot
salt, to taste
fresh chillies, pounded to a paste, to taste

Method:

Cut the lobster in half lengthways and remove the gut. Dot both halves with butter and season to taste with salt and chilli paste.

Place the lobster, shell side down, on a pre-heated barbecue and cook for about 20 minutes, or until just done through.

When the lobster is cooked, dot with a little more butter. Serve immediately, accompanied by plain white rice.
