Lightly-brined Turkey

Lightly-brined Turkey is a modern British recipe for a method of brining turkey in a light brine of sugar and salt flavoured with bayleaves, juniper berries and chillies prior to roasting. Ingredients:

250 water
15 tbsp sugar
15 tbsp salt
3 bayleaves, roughly torn
10 juniper berries, crushed
3 dried chillies, crushed

1 prepared turkey

Method:

Combine the sugar, salt and spices with 500ml of the water. Bring to a boil then take off the heat and set aside to infuse for 10 minutes before adding the remaining water. Add the turkey to a large container then mix the brine solution with enough additional water to cover the turkey. Transfer to the refrigerator and leave to cure (a 7kg bird is said to require at least 4 days). The quantities given here are sufficient for 10l of final brine, adjust your quantities accordingly.

After the brining period rinse the bird then dry and set aside in the refrigerator to equilibrate over night. The following day dry the bird carefully both inside and out then transfer to the oven. Now roast the bird using the traditional roast turkey recipe.
