Camel meat patties are eaten wherever camels are reared in abundance. I first had one on a trip from Senegal to Mauritania. Camel meat is one of the leanest red meats and is sweeter in flavour than beef, though with a similar texture. Versions of this recipe are prepared in Africa: Mauritania, Eritrea, Somalia, Ethiopia, Djibouti, Egypt and the Sudan as well as the Middle East: Syria, Saudi Arabia, Libya and Kazakhstan. Though the method of production is the same, the ingredients vary slightly from country to country, particularly the spices used.

Ingredients:

1kg minced (Ground) camel meat
1/2 medium red onion, diced
2 Garlic cloves, minced
2 tbsp Ground cumin
2 tbsp coriander (Cilantro) leaves, finely chopped
2 tbsp harissa
2 tbsp Ground coriander seeds

Method:

Take a mixing bowl and add the camel meat, garlic, tamari, red onion, coriander (leaves and seeds), cumin and harissa. Mix all the ingredients thoroughly to combine.

Using your hands (clean of course) gently combine all the ingredients until everything is mixed thoroughly.

Now, take small batches of the mixture and shape them into 6 patties of equal size. The patties should be approximately 3cm thick.

Next, take a pan and arrange all 6 of them in a way that they do not touch each other and refrigerate for 2 hours.

To cook, set a heavy frying pan over medium-high heat. Once hot add a splash of oil and use to fry the burgers, turning half way through, until the patties are nicely browned and cooked to your liking.
