Lawves (Walnut Fudge) is a traditional Uzbek recipe for a classic walnut fudge made with sugar and lemon juice. The full recipe is presented here and I hope you enjoy this classic Uzbek version of: Walnut Fudge (Lawves).

Ingredients:
600g sugar
700ml water
1/2 tsp lemon juice
900g walnuts, coarsely chopped
Method:
Combine the sugar and water in a pan and bring to a boil. Reduce to a low simmer and cook for an hour, or until the mixture reaches the soft ball stage (where sugar syrup dropped into cold water will form a soft, flexible ball. If you remove the ball from water, it will flatten like a pancake after a few moments in your hand) [116°C as measured by a confectioner's thermometer].
Add the lemon juice and simmer for a few seconds then add the walnuts and stir quickly to combine. Immediately turn the fudge out onto a greased baking tray and press down to a rough oblong 2.5cm thick with a moistened spoon or spatula.
Allow to cool but whilst still warm cut into wedges or cubes with an oiled knife. This fudge can be served either warm or cold.
