Lammfärsfyllda squashbåtar (Lamb-stuffed Squash Boats) a Classic Swedish recipe for a risotto of arborio rice in a white wine and chicken stock base flavoured and coloured with saffron and finished with cheese.
Ingredients:
4 squashes, baby marrows or courgettes (zucchini), each about 200g in size
1 small yellow onion
25g walnuts
200g minced lamb
50g butter
2 tbsp olive oil
1 tsp ground cardamom seeds
2 pinches of sea salt
1 pinch of freshly-ground black pepper
200g grated cheese
For the Paprika Yoghurt Dip:
500ml Greek-style yoghurt
1 tbsp tomato purée
2 tsp paprika
Method:
Halve the squashes lengthways then scoop out the seeds and some of the flesh so that they are hollowed out into rough boat shapes (but take care not to pierce the skins).
Peel and chop the onion and chop the nuts. Heat the butter and oil in a pan, add the onion and lamb mince to the pan and fry for about 6 minutes, or until lightly golden brown. Mix in the nuts and cardamom and season to taste with salt and black pepper. Turn onto a plate and set aside to cool.
Once cool, use this stuffing mixture to fill the squashes then sprinkle the grated cheese over the top. Arrange on a baking tray lined with parchment paper. Transfer to the centre of an oven pre-heated to 200°C and bake for about 18 minutes, or until the squash is tender and the cheese has melted and browned.
In the meantime, mix together all the ingredients for the dip. Place in a bowl and chill in the refrigerator until needed.
Serve the stuffed squashes accompanied by the dip. This dish can be served as a starter or as a main course, accompanied by rice.
