Cut the rack into individual chops then trim all the fat from the top of the chop (the skin side). Place each chop between two sheets of clingfilm and pound a few times with a mallet or rolling pin to flatten the meat.
To cook, either barbecue for about 3 minutes per side or grill (broil) under a hot grill for the same amount of time. Alternatively the meat can be fried in about 1 tsp butter for about 3 minutes per side.
To serve sprinkle the chops with ground dried oregano and plate-out whilst still hot.
