Courgette (zucchini) flowers are very tasty and form the basis for a range of cuisines. Often they are battered and fried, as in this recipe.

Method:

Wash he courgette flowers and remove the bract (the green leaf-like structures on the outside of the flower) then set aside to drain. Make a thick batter of the flour, egg, milk, olive oil and salt.

Whisk thoroughly then heat some olive oil in a pan. Once the oil is hot dip the flowers one by one into the batter, ensuring they are well coated then fry in the hot oil until golden. Serve hot, as soon as they emerge from the oil.
