Ingredients:
150g onions, chopped
150g carrots, sliced
1/2 tsp sea salt
1/8 tsp freshly-ground white pepper
120ml water
500g fish fillets (use firm white fish)
150g dill pickles, chopped
1 tbsp capers
120ml mayonnaise
3 tbsp brandy
2 tbsp lemon juice
120ml catsup
1 lemon, sliced
Method:
Add the water a pan along with the onion and carrot. Bring to a simmer, cover and cook for about 10 mites, or until tender. Place the fish in the pan and spoon the vegetables over the top. Re-cover the pan and cook gently for about 20 minutes, or until the fish flakes easily with a fork.
Remove the fish from the pan and flake with a fork. Drain the onions and carrots then combine in a bowl with the flaked fish, pickles and capers. Allow to cool completely, cover with clingfilm and chill in the refrigerator for at least 2 hours.
When ready to serve, whisk together the mayonnaise, brandy, lemon juice and catsup in a bowl. Arrange the fish salad on serving plates, spoon some of the mayonnaise sauce over the top, garnish with lemon slices and serve.
