Khabourga (Stuffed Lamb Flank)

Khabourga (Stuffed Lamb Flank) is a traditional Armenian recipe for a classic dish of lamb flank stuffed with a mix of onions, bulgur wheat, rice and parsley that's par-boiled and then finished by roasting. Ingredients:

1 large lamb flank (or breast of lamb)
2 small onions, chopped
75g medium bulgur wheat
50g parsley, finely chopped
50g rice
1/2 tsp paprika
1/4 tsp fresh dill, chopped
salt and freshly-ground black pepper, to taste
paprika to sprinkle

Method:

Combine all the ingredients (except the meat) in a bowl. Use a sharp knife to open the meat then season liberally with salt and black pepper. Cover with the stuffing then close the meat and sew to close securely.

Place in a large pan or wok and half cover with water. Bring to a boil and cook for about 30 minutes (you want the meat about half done). Remove from the water and transfer to a roasting tin. Sprinkle with paprika then transfer to an oven pre-heated to 170°C and roast for about 90 minutes. Remove the strings, slice and serve.
