Ingredients:

350g pork thigh or shoulder, diced
2 potatoes, peeled and cut lengthways into about 6 strips each
3 green chillies, halved lengthways
1/2 onion, finely chopped
1/2 tsp hot chilli powder
3 garlic cloves, crushed
3cm piece of ginger, grated
1/2 tbsp vegetable oil
salt, to taste

Method:

Combine the pork and about 400ml water in a saucepan. Season with a little salt and bring to a boil. Cook, covered, for about 20 minutes, or until the meat is just cooked through, then add the chillies, potatoes, onion, chilli powder and oil. Return to a boil and cook for about 15 minutes, or until the potatoes are 3/4 done.

Add all the remaining ingredients and cook for a further 5 minutes, or until the potatoes are tender and cooked through. Serve hot.
