Kewa Datshi (Potatoes with Cheese) is a traditional Bhutanese recipe for a classic dish of boiled potatoes mixed with cheese, chilli powder and onions that's served as an accompaniment. Ingredients:
4 potatoes, peeled and cut into chip (fries) sized pieces
75g white cheese (your preference), grated
45g red onions, chopped
1 tbsp oil
1 tsp salt
1/2 tsp hot chilli powder (or to taste)
Method:
Add the potatoes to a pan along with the oil and salt and cover with 360ml water. Bring to a boil, reduce to a simmer, and cook for about 20 minutes or until the potatoes are tender. Just before the potatoes are done add the cheese, onion and chilli.
You are looking for a dish that is well flavoured but not completely dry. If the potatoes look like drying out completely add a little more hot water. Serve hot as an accompaniment.
